To me, there’s nothing more delightful than whippin’ together a mean Mexican meal at home. And ta da, the recipe we’ve got on tap for this weekend is just that! Skip the long wait, the sugary-sweet margaritas, the millions of calories and the Mariachi music and opt for a quiet night at home, making your own Mexican fiesta with your family and if you’re feeling adventurous, good friends! Who knows, maybe you’ll even serve up some finger-lickin’ salsa, chips and guacamole? Yum!

When it comes time for the main event — these delicious, mouth-watering enchiladas are going to have you going back for seconds…. and thirds! It’s the perfect make ahead meal your kids will love, too, so you won’t have to worry about picky eaters saying “no!” to your the deliciously seasoned fare. The best part? You can add (and take out!) ingredients you don’t like and swap ‘em for the items you do.

Making Mexican at home is a good way to keep track of the calories, too, if you’re into that sort of thing. You can opt for light sour cream (or try Greek yogurt instead!), reduced fat cheese and whole wheat tortillas. The more time you spend enjoying the food

Head on over to TheNest.com for the slim and trim chicken enchilada recipe! You can thank us later!
